As a vegan mama in a non vegan family, I make a plant core meal every night with options for everyone. However, I love a Meatless Monday moment because it puts the spotlight on vegan foods and shows how delicious they are without dairy or meat.

 

It's also an opportunity to share my love of plant-based food and expand taste buds and minds! On such occasions, I stick to big flavors and familiar ingredients so that I can hear them say "I can't believe this is vegan..." With that in mind, I've rounded up 5 meatless meals that will ensure your dinner success on Meatless Monday.
