Buffalo Chickpea Burgers

It's burger season! Gone are the days of dry black bean pressed and tasteless, sad veggie burgers. Even with all of the faux meat options, I still prefer a homemade whole foods plant-based burger loaded with real ingredients. Case in point: these Buffalo Chickpea Burgers.
With all the traditional flavors you'd expect in your Buffalo cauliflower wings (yes, I see you vegan Ranch dressing and bleu cheese), I've also added the typical crunch you'd get with your side of celery and carrot sticks. I'm so excited with how these chickpea burgers came out and can't wait to hear what you think!
Recipe Tips
Chickpea flour is also knowns as "garbanzo bean flour". It adds more protein to these powerhouse burgers and maintains the flavor of the mashed chickpeas. I specifically have you chop your celery and carrot separately instead of throwing everything into the food processor at once. You'll have a firmer burger with more crunch to it as a result.
My go-to brands for store-bought Ranch dressing (if you're not using our Batch Cooking Club Creamy Vegan Ranch Dressing), is Follow Your Heart's variety or their Creamy Garlic Dressing. For vegan bleu, I'm super impressed with Follow Your Heart's crumbles if I can't get my hands on Rind's spectacular artisan bleu.

Buffalo Chickpea Burgers
Prep time: 20 minutes | Cook time: 10 minutes
Serves 8
Ingredients:
2 15-oz cans chickpeas
2 carrots, chopped
2 celery stalks, chopped
¾ cup chickpea flour
½ cup Buffalo sauce
8 regular or gluten-free hamburger buns
1 red onion, thinly sliced
½ cup Creamy Vegan Ranch Dressing
romaine or butter lettuce leaves
2-oz crumbled vegan blue cheese (optional)
Directions:
- In a food processor, pulse the chickpeas until chopped but not mushy. Transfer to a large mixing bowl and add the carrots, celery, chickpea flour and buffalo sauce.
- Mix well with your hands to form a firm but moist dough. Taste and add more buffalo sauce, to taste.
- Form into 8 patties. Heat a large skillet over medium heat and add the patties. Cook for 4-5 minutes on each side. Allow to cool for 10 minutes.
- While the burgers cook, toast the buns and slice the onions.
- To serve, toast the hamburger buns and spread each side with Creamy Vegan Ranch Dressing. Top each bun with lettuce leaves, red onion, a chickpea burger and vegan blue cheese, if using. Place the other bun on top and enjoy!
Spoiler Alert: Buffalo Chickpea Burgers are best eaten when served.
For non vegans: Replace the chickpeas with 1 pound of ground chicken, turkey or beef.
