Thanksgiving may be over but that doesn’t mean we still can’t eat the flavors of the holiday all year long! Case in point: Our “Tastes Like Thanksgiving” Sweet Potatoes & Brussels Sprouts.

“Tastes Like Thanksgiving” Sweet Potatoes & Brussels Sprouts
Prep time: 15 minutes | Cook time: 30 minutes
Makes 4 cups
2 sweet potatoes, peeled and cubed
1 pound Brussels sprouts, cleaned trimmed and sliced in half
1 Tbsp olive oil or vegetable broth
1 Tbsp garlic powder
1 tsp sage
1 tsp thyme
½ tsp marjoram
1 tsp rosemary
½ tsp nutmeg
2 Tbsp vegan poultry seasoning
½ tsp sea salt
¼ tsp freshly ground black pepper
½ cup Italian parsley, chopped
- Preheat the oven to 350°F.
- On a baking sheet lined with a silpat mat, place the sweet potatoes and Brussels sprouts.
Toss with the olive oil (or vegetable broth) and seasonings.
- Spread evenly on the baking sheet and roast for 15 minutes. Stir the vegetables and cook for another 15 minutes.
- Remove from the oven and cool for 10 minutes. Toss with the fresh parsley.
