Lemon-Thyme Hummus

Do you love hummus as much as we do? If so, you're going to love this DIY version that you can use in a variety of ways including our Italian Hummus Wraps and Lemon Hummus Pasta with Spinach & Sun-dried Tomatoes. Whether you're slathering it on wraps, tossing it in salads or pastas, or scooping it with pita, we know you'll love the tangy and savory version.

 

Lemon-Thyme Hummus            

 Prep time: 10 minutes 

Makes 4 cups

 

Ingredients:

2 15-oz can chickpeas, drained (reserve the liquid)

4 cloves garlic

juice of 2 medium lemons

½ cup tahini

1 tsp salt

1 tsp fresh thyme

 

Directions:

  1. Blend all the ingredients in a food processor or blender. 
  2. Slowly add ½ cup of the reserved chickpea liquid. Add more as needed to thin to desired consistency.
  3. Taste and add more salt as needed.

 

Spoiler Alert: Lemon-Thyme Hummus will stay fresh in an air-tight container in the refrigerator for a week.

 

Batch it up! Lemon-Thyme Hummus is a tasty spread on sandwiches and wraps. It also makes a great dip with vegetables and crackers.
