This week's dinner menu sings Spring! Is that a thing? Well, I'm making it so in this week's menu. This post gives you a sneak peek at next week's menu and meal plan to add more plant-based meals to your family’s menu while still caring for the non-plant based members in your family.
From a lemony herb soup to a lentil stuffed Stromboli, I've channeled my Italian roots for several of the recipes in this week's dinner plan. I've also got a Mediterranean inspired orzo recipe in the mix, and a soba noodle salad that's bursting with flavor.

Making it Happen
In addition to this done-for-you dinner plan, we also include a done-for-you prep plan so you don’t have to start from scratch with cooking every night. Prep for success in less than 2 hours once a week. If you're following our plan, here's what you can look forward to batch cooking on the weekend:
Peanut Tofu: My Batch Cook Sunday meal prep always includes a marinated plant-protein for tossing in salads and bowls for the week. This Asian-inspired tofu is one of my go-to's and a member favorite for our Soba Noodle Salad on the dinner menu for the week.
Spring Herb Soup: New to the Member Library this week, I predict that this light and lemony soup will soon be a club favorite. Pair it with an arugula salad for all the vibes of the season.
Spring Lentils: This simple recipe is just as delicious with store-bought pre-steamed lentils as it is with dry lentils from scratch. Fresh herbs, lemon zest and fresh lemon juice are all you need to add a little pizzaz to these legumes.
