Happy Meal Plan Monday! Can you believe it's December? The holiday season is upon us and although there's lots of merry merry to be had, I'm here to make sure you stay on task with your meal planning and prep through the busiest time of year. Our member menu and meal plan drops Wednesday morning and I've got you covered with another delicious round up of recipes to feed your family.

Plan Preview

Our members receive a new meal plan every Wednesday morning so they have time before the weekend to finalize what else they're cooking for the week, grocery shop, and meal prep by Sunday.

Yellow Split Pea Soup

Picadillo is a traditional dish in many Latin American countries and the Philippines. It is made with ground beef, tomatoes, and also raisins, olives, and other ingredients that vary by region. I've veganized this adored dish with tempeh this week and am making a double batch to serve as a topping on pizza and also in Sloppy Joe's.


We're also having some fun with mac 'n cheese with a twist on the favorite recipe with our Healthy Spinach & Artichoke Dip. And it's soup season so I've rounded out the week with an oh-so-yummy Yellow Split Pea Soup that's a crowd pleaser. 


As the only vegan in the house, I've included suggestions in the plan for all of these recipes to please non vegans so that you can close your "restaurant kitchen" and all eat the same meal each night. 


Making it Happen 

In addition to this done-for-you meal plan, we also include a step-by-step prep plan to speed up dinner during the week. If you're following our plan, here's what you can look forward to batch cooking on the weekend:


Healthy Spinach Artichoke Dip: If you haven't made this dip, you're missing out! Try it here. Make a double batch and use half for this week's mac 'n cheese and the other half for snacking all week long. 



Parmesan Sweet Potato Tots: This recipe is so fun and is a great one to do with the kids. I love the opportunity it gives me to introduce my kids to sweet potatoes (because they normally will always opt for Russets).


Tempeh Picadillo: As I mentioned above, we're using this recipe on pizza and in Sloppy Joe's, but it's also served traditionally as a filling in tacos. 


Yellow Split Pea Soup: This earthy recipe is a twist on tradition split pea soup. The yellow variety offers a little something different to the flavor profile but regular split peas work too if that's what you've got on hand.
