I'm kicking off 2022 with another fun and delicious menu and meal plan for your family! Whether your whole family is vegan or not, our plant-based recipes are easily adaptable for everyone and curated with just that in mind. With plants at the core, you can stop being a short order cook and make one meal for the whole family.

Our members receive a new meal plan every Wednesday morning so they have time before the weekend to finalize what else they're cooking for the week, grocery shop, and meal prep by Sunday.

This menu is full of delicious flavors without all the fat and dairy so you can kick off 2022 with some healthy meals that will satisfy the whole family. The Lemony Tortellini Pesto Soup is new this week and it's sure to be a family favorite. I like to serve it with a dollop of pesto on for extra flavor. I've also got a skillet pizza and another sheet pan meal because I can't get enough of this easy meal idea. Last but not least, I've got a unique twist on a Panzanella salad that you can serve as is or roll it into wraps.
As the only vegan in the house, I've included suggestions in the plan for all of these recipes to please non vegans so that you can close your "restaurant kitchen" and all eat the same meal each night.
Making it Happen
In addition to this done-for-you meal plan, we also include a step-by-step prep plan to speed up dinner during the week. If you're following our plan, here's what you can look forward to batch cooking on the weekend:
Balsamic Miso Mustard Dressing: This is getting drizzled onto the Polenta Panzanella Salad but I suggest making a double batch for serving with dinner side salads all week long. Batch once and eat twice (or more!). Try the recipe here.
Chickpea Bruschetta: Serve this is a dip on bread, stuff it into pitas, or spoon it over our Panzanella Salad like our members are doing next week for dinner. Try the recipe here.
Lemony Arugula Pesto: This is a Batch Cooking Club favorite. There are so many ways to use pesto that this recipe is a staple in my meal plans. For next week's menu, we're using it both in a soup and on pizza. Get the recipe here.
Roasted Fennel and Tomatoes: Roasted vegetables are almost always in my batch cooking plan because it speeds up dinner prep significantly. Case in point: These veggies are getting folded into a sheet pan frittata for a simple, yet delicious weeknight meal.
