We've got something for everyone in this week's menu - Asian, Greek and Latin! Plus, we've got a new burger in the plan that I can't stop drooling over. Thank goodness it makes a big batch so I can serve half this week and freeze the rest for whenever the craving strikes.

As a vegan mama in a non-vegan family, the meals in our weekly meal plans are always plant-centric so that plant-based foods are in the center of the dinner plate while still having options for non-vegans. Making it Happen
In addition to this done-for-you dinner plan, we also include a done-for-you prep plan so you don’t have to start from scratch with cooking every night. Prep for success in less than 2 hours once a week. If you're following our plan, here's what you can look forward to batch cooking on the weekend:
Butter Chickpeas & Cauliflower: This Indian-inspired dish is comfort in a bowl. Make a batch of basmati or jasmine rice while you're at it for a complete dinner that can be reheated in 10 minutes.
Creamy Cilantro Pepita Dressing: This is the only dressing you need for pairing with Latin-inspired dishes. Dress your salads, pour it on rice and beans, or drizzle it over enchiladas and other Latin favorites instead of sour cream or crema.
Creamy Vegan Ranch Dressing: Best ranch dressing ever. Period! This goes fast in my house so I always double the recipe. Try it for yourself here.
Quinoa Fried Rice: Who needs takeout when you can make a batch of this dish that's just as delicious but so much healthier?
Tempeh Picadillo: Picadillo is a traditional Latin dish that's made different ways depending on the country. You can serve it up a dozen different ways or eat it as is with tortillas for scooping. We're spooning it into taco cups this week for a fun twist to serve up on Taco Tuesday. Get the recipe here.
