It's time for another sneak peek at our upcoming member menu and meal plan! Whether your whole family is vegan or not, our plant-based recipes are easily adaptable for everyone and curated with just that in mind. With Thanksgiving upon us, I know you've got lots to prep next week so I've created this meal plan so that you can prep most (if not all) of the dinners this weekend to just reheat and serve. Instead of dinner, you can focus on your Thanksgiving prep and still have healthy, homemade meals to serve each night.

Our members receive a new meal plan every Wednesday morning so they have time before the weekend to finalize what else they're cooking for the week, grocery shop, and meal prep by Sunday.

As I mentioned above, the majority of our plan focuses on full meals you can make ahead of time. In fact, 3 of the 4 meals on the weekly menu (Black Bean & Potato Enchiladas, Italian White Bean Stew, and the Roasted Tomato "Meat" Sauce with Orzo) can all be made on the weekend and reheated later in the week. All of those meals freeze well too.
I've also included a recipe to use up all your Thanksgiving leftovers. Your family is going to love these nacho! Be sure to return here to the blog on Wednesday for the full recipe. And not to worry if you're the only vegan in the house, I've included suggestions in the plan for all of these recipes to please non vegans so that you can close your "restaurant kitchen" and all eat the same meal each night.
Making it Happen
In addition to this done-for-you meal plan, we also include a step-by-step prep plan to speed up dinner during the week. If you're following our plan, here's what you can look forward to batch cooking on the weekend:
Black Bean & Potato Enchiladas: This recipe is a family favorite and it's very versatile. Swap sweet potatoes with regular and black beans with any canned variety you have on hand. These also freeze well so you can make a big batch and save some for a future meal.
Chickpea “Meat” Sauce: This mouth-watering meat sauce is doing double duty in our Italian White Bean Stew AND Roasted Tomato "Meat" Sauce with Orzo. We call that "more bang for your batch"!
Italian White Bean Stew: This hearty stew satisfies whether you're vegan or not. It takes our Chickpea "Meat" Sauce" and combines it with a robust broth, chunky potatoes and white beans for a protein powerhouse meal that has all the Fall feels.
Mushroom-free Vegan Gravy: Make a big batch of this flavorful gravy for Thanksgiving and set aside a portion to pour on our Thanksgiving Sweet Potato Nachos later in the week.
