If you're looking for a little EXTRA to add to your salads, grain bowls, pastas or casseroles, sprinkle on some of this Tofu Feta! We created this recipe for topping the Week 19 Mediterranean Farro Casserole but we know you'll love it on anything. Make a batch on the weekend and eat it all throughout the week.
Prep time: 10 minutes | Cook time: 2 hours
Makes 2 ½ cups
1 14-oz package firm tofu
¼ cup apple cider vinegar
½ cup red wine vinegar
1 Tbsp dried oregano
1 Tbsp dried parsley
1 Tbsp garlic powder
¼ cup water
¼ cup lemon juice (about 2 lemons)
- In a large bowl, combine all of the ingredients. Cover and let marinate at least 2 hours (the longer, the better).
Soy Allergy? Substitute chickpeas for the tofu.
Spoiler Alert: Tofu Feta will stay fresh in an air-tight container in the refrigerator for 7 to 10 days.
